This French Onion Soup always satisfies my hunger for a warm, comforting meal.
It tastes identical to an original french onion soup but, when topped with my Homemade Almond Cheese and v/gf bread, it’s waaaay more delicious than an ordinary bowl!
It’s also incredibly easy to make, which is unexpected for something this good. With this recipe, you can have a 5 star restaurant quality meal in the comfort of your own home! It doesn’t get any better than that!
Vegan French Onion Soup
Reminiscent of a traditional French onion soup, but way healthier and definitely tastier!
- 1 1/2 tbsp olive oil
- 2 medium white onions thinly sliced
- 3 garlic cloves peeled and minced
- 1 bay leaf
- 1/2 tsp dried thyme or 5 sprigs of fresh thyme
- 1/2 tsp onion powder
- 1/4 tsp celery seed
- 1/4 tsp paprika
- Salt and pepper to taste
- 1/3 cup red wine
- 2 tbsp gluten-free all purpose flour
- 4 cups low-sodium vegetable broth
In a large pot, heat the coconut oil over medium heat. Add the onions, garlic, bay leaf, thyme, salt and pepper. Sauté until the onions are very tender & caramelized, about 45 minutes. Stir often to avoid the onions sticking to the pot.
Add the red wine and bring to a boil, reduce heat and simmer on low for about 10-15 minutes, or until the wine has evaporated.
Remove the bay leaves and stir the flour in with the onions. Turn the heat down to medium-low and cook for another 2-3 minutes. Stir often so the flour doesn’t burn.
Add the vegetable broth and simmer for 10-15 minutes. Taste the soup to see if it needs anymore salt or pepper and add if needed.
Serve warm with an optional bread and cheese topping and enjoy!!
