Peanut Butter Chocolate Chip Oatmeal Bars (V/GF)

I loooove these bars. I really, really do. Not only are the vegan and gluten-free (woohoo!), they’re also absolutely scrumptious! They’re soft, moist and have a fresh, delicious flavor.

They’re made with pure, wholesome ingredients like Oats, Almond Meal, All-Natural Peanut Butter, Apple Sauce, Pure Maple Syrup, Flax-seeds, Dark Chocolate and Crushed Peanuts. With ingredients like that, you know it can’t be anything but amazing!

Peanut Butter Chocolate Oatmeal Bars (V/GF)

Ingredients

Dry Ingredients

  • 1 cup gluten-free rolled oats
  • 3/4 cup almond meal or flour
  • 1 3/4 tsp baking powder
  • 1 tbsp flax-seeds
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/3 cup dark chocolate chips
  • 1/3 cup unsalted peanuts , crushed

Wet Ingredients

  • 1/2 cup maple syrup
  • 1/2 cup natural creamy peanut butter
  • 1/4 cup apple sauce , unsweetened
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract

Instructions

  1. Preheat oven to 350 degrees F. Line an 8-inch square baking pan with greased foil. Set aside.

  2. In a large bowl, whisk together dry ingredients (except the chocolate chips and peanuts).

  3.  In a separate bowl, whisk together wet ingredients until smooth.

  4. Add wet ingredients to dry ingredients and mix thoroughly.

  5. Add chocolate chips and peanuts. Mix well.

  6. Pour dough into the prepared baking pan. Using a rubber spatula, spread into an even and tightly packed layer.

  7. Bake until the top is edges are a golden brown, about 20-30 minutes.

  8. Place on a cooling rack for 1 hour, or until completely cool. Slice into bars and enjoy! Store leftovers in an airtight container for up to a week.
