I can’t seem to stop making cookies lately. They’re so easy, versatile and never fail to satisfy!
These Oatmeal Date Cookies are the cookies of my dreams! They’re filled with chewy dates, bites of pecans, mini dark chocolate chips and warm notes of cinnamon.
The dates offer a really nice chewiness to these cookies as well as an almost caramel-like flavor. They go perfectly with the pecans!
Oatmeal Date Cookies (V/GF)
These Oatmeal Date Cookies are filled with oats and bites of chewy dates and crunchy pecans!
Ingredients
- 1 cup gluten free all purpose flour
- 1 cup gluten free old fashioned oats
- 1/2 cup almond flour
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup melted coconut oil
- 1/2 cup coconut sugar
- 1/4 cup unsweetened applesauce
- 1 tbsp vanilla extract
- 1/2 cup pitted medjool dates , chopped
- 1/2 cup pecans , chopped
- 1/4 cup dark chocolate chips
Instructions

Preheat oven to 350 degrees F.

Line a baking sheet with parchment paper and set aside.

In a medium bowl, mix the dry together thoroughly.

In a separate bowl, mix wet ingredients together thoroughly.

Gradually add dry ingredients to wet ingredients. Mix until completely combined.

Fold in the chopped date, pecans and dark chocolate chips.

Let cookie dough chill covered in the refrigerator for 30 minutes.

With an ice cream scoop, scoop cookie dough onto the prepared pan creating about 12 equal sized cookies. Slightly press down on each cookie to flatten a little. Don’t flatten them too much!

Bake until golden brown and firm, about 15-17 minutes.

Let cool slightly before serving and enjoy!!
