Basil Apricot Burger (V/GF)

Ingredients

Burger

  • 1 15 oz can chickpeas , drained and rinsed
  • 1/2 of a large red onion , roughly chopped
  • 1 cup fresh basil , tightly packed
  • 1 tbsp gluten-free all purpose free flour
  • 14 dried apricots
  • 2 tbsp peanut butter
  • 2 large cloves of garlic
  • 1/4 tsp ground cumin
  • 1/4 tsp ground ginger
  • a pinch of ground cinnamon
  • a pinch of ground coriander
  • a pinch of cayenne powder
  • a pinch of ground cloves
  • salt and pepper to taste

Toppings

  • 4 buns
  • apricot basil jam
  • caramelized onions
  • fresh basil

Instructions

  1. In a food processor, combine all of the ingredients and process until smooth.

  2. Transfer mixture to the refrigerator to chill for half an hour.

  3. Preheat oven to 400 degrees F and line a baking sheet with parchment paper.

  4. Form mixture into 4 even sized patties and place on the parchment lined baking sheet.

  5. Bake for 20 minutes on each side, or until golden brown and firm.
