Carrot Ginger Dressing (V/GF)

This dressing is zesty, sweet, thick in texture and has a bright orange color that is absolutely beautiful, especially when pairing with already colorful veggies!

Ingredients

  • 1 cup carrots peeled and grated
  • 1/2 cup peanut oil
  • 3 tbsp rice wine vinegar
  • 2 tbsp pure maple syrup
  • 1 tbsp fresh ginger finely grated
  • 2 tsp miso paste
  • salt and pepper to taste

Instructions

  1. Blend all of the ingredients together and enjoy!!

  2. Store leftovers in an airtight container in the refrigerator for up to 5 days.
