Preheat oven to 325 degrees F.

Combine gluten-free flour, vegan butter, coconut sugar and a pinch of salt in a medium bowl.

Using your fingers, work the mixture until it comes together in small clumps. Scatter crumble on a large parchment-lined baking sheet.

Bake until golden brown and slightly firm, about 30 minutes.

Let cool and then break into smaller pieces. Set aside.

To make the pears, add the vegan butter to a medium sized skillet over medium-high heat. Once butter is melted, add the chopped pears and cover with the remaining ingredients. Stir to evenly coat pears. Let cook while occasionally stirring until sauce has thickened and pears are tender, about 10 minutes. Set aside to cool slightly.

Assemble the parfaits starting with a layer of the granola crumble, then the pears, then the whipped cream. Repeat until your glass is full. The top layer should be the whipped cream.
