Ingredients
2/3cupcoconut oil, room temperature
1cupcoconut sugar
1/2cuppure maple syrup
1/4cupflax meal
1tbspvanilla extract
2/3cupunsweetened cocoa powder
1cupgluten free all-purpose flour
1/2tspsalt
1/2tspbaking powder
1/2cuporange chocolate chunks (I use the Theo's brand chocolate bar and break it into chunks)
Zest from 1 orange
Instructions
Preheat oven to 350 degrees F and grease an 8-inch square pan with coconut oil or spray with cooking spray.
In a large bowl, thoroughly mix together coconut oil and coconut sugar. Add maple syrup, flax meal, and vanilla extract. Whisk together until combined.
Gradually add cocoa powder, GF all-purpose flour, salt and baking powder to the wet ingredients while mixing. Mix until fully combined.
Fold in the chocolate chunks and orange zest.
Pour batter into prepared pan. and bake for 40 minutes.
Let cool slightly, top with optional orange zest, cut into squares and enjoy!!
