Cilantro Lime Avocado Hummus (V/GF)

When guacamole meets hummus, you get this Cilantro Lime Avocado Hummus! A.K.A the best dip ever!

Ingredients

  • 2 garlic cloves peeled and minced
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice (about two limes worth)
  • 1/4 cup tahini
  • 1/4 cup aquafaba (liquid from a can of chickpeas)
  • 3/4 tsp salt
  • 1/4 tsp ground cumin
  • 1/4 tsp smoked paprika
  • Zest from 1 lime
  • 1 15 oz can chickpeas drained and rinsed
  • 2 medium ripe avocados
  • 1/2 cup (tightly packed) fresh cilantro

Instructions

  1. In a blender or a food process, blend/process the garlic cloves, olive oil, lime juice, tahini, aquafaba, salt, cumin, smoked paprika and lime zest until mixed well. Then, add in the remaining ingredients and blend/process until smooth and creamy, about one minutes. You may have to stop it to scrape down the sides once or twice during the blending process.

  2. Enjoy! Store leftovers tightly covered in the refrigerator for 5-7 days.
