Fig, Almond Cheese and Caramelized Onion Flatbread

This flatbread is made with red onions that are caramelized in apple juice, balsamic vinaigrette, fresh thyme and topped with figs and homemade almond cheese. Absolutely delicious!

Ingredients

  • 2 pieces of flatbread (I use Mybread's brand)
  • 1/4 cup almond cheese *see notes
  • A handful of dried figs cut into fourths
  • 1 tbsp olive oil + more for brushing flatbreads
  • 2 medium red onions thinly sliced
  • a generous pinch of salt
  • 3 tbsp balsamic vinegar
  • 1 cup apple juice
  • 1 tbsp coconut sugar
  • 1 tbsp fresh thyme leaves

Instructions

  1. Heat olive oil in a large pan over medium-high heat. Once the oil is hot, place the sliced onions in the pan and add in the pinch of salt. Reduce heat to and cook them until soft but not brown, about 10-15 minutes. Stir occasionally.

  2. After the onions are softened and translucent, add in the balsamic vinegar, apple juice and sugar. Cook at a low heat until the liquid has evaporated and the onions are browned and caramelized. Stir every once in a while to prevent them from sticking to the pan. This should take about another 30-45 minutes.

  3. Remove from heat and add in the thyme. Set aside.

  4. Lightly brush flatbreads with olive oil and top with the onions, almond cheese and figs. Bake at 350 degrees F for 10 minutes or follow the cooking instructions on your flatbread package.

  5. Serve warm and enjoy!!!
