The beauty of this recipe is that you can use any dried fruit you'd like: raisins, dates, dried cherries, you name it! You can also add some extra goodies like chia seeds, pepitas, cacao nibs, whatever your heart desires! You could switch up the nuts too, but the pecans and hazelnuts are actually my favorite part of all this deliciousness!
Preheat oven to 325 degrees F and line a baking sheet with parchment paper. Set aside.
In a large bowl, mix together the maple syrup, coconut sugar, vanilla, salt and coconut oil.
Add the oats, hazelnuts and pecans to the wet ingredients and mix to combined.
Making an even layer, spread the mixture onto the prepared pan.
With your hands, press mixture until it’s very compact.
Bake for 30-35 minutes rotating pan once halfway through baking.
Once baked, remove it from the oven and let it cool completely, about an hour.
Break cooled granola into pieces of your desired size.
Mix in the chopped dried fruit and shredded coconut.
Enjoy!!!
Notes: You may switch up the dried fruit to your preference. Although, this combination is absolutely delicious!
