For the mango pudding, add the chopped mango and the coconut milk to a food processor or blender and /process blend until smooth. Pour mango milk to a glass or jar and then add the remaining ingredients. Whisk vigorously together. Let sit for 10 minutes and give it a whisk every minute or so. Transfer to the refrigerator to let set for 3-4 hours.

If you want this delicious a lot faster, you can pop it in the freezer for 5-10 minutes! The nice thing about letting it chill in the refrigerator for a few hours is that you can make it, go on with your day and then come back home to a nice treat. If you freeze it, you'll want to eat it immediately.
