Watermelon Vanilla Jam (V/GF)

This watermelon jam takes only 20 minutes to make and only 5 ingredients, one being a sweet touch of vanilla. So tasty I could eat it by the spoonful!

Ingredients

  • 2 cups chopped watermelon skin, seeds and rinds removed
  • 2 tbsp pure maple syrup
  • 2 tbsp lemon juice
  • 2 tbsp chia seeds
  • 1 tsp vanilla extract

Instructions

  1. Place chopped watermelon in a pot or saucepan and coat the fruit with the maple syrup and lemon juice. Stir to combine. 

  2. Heat over medium/low heat until the watermelon turns starts bubbling, about 5 minutes.

  3. Reduce heat to the lowest setting and smash the watermelon pieces with a fork. This will next a little extra work than smashing other softer fruits. Be patient! 

  4. Add chia seeds and stir until combined.

  5. Bring heat back to med/low and let bubble until jam thickens, about 10 minutes. Make sure to stir every once in awhile to avoid burning!

  6. Remove from heat and and stir in the vanilla.

  7. Let cool for 10 minutes before transferring to jars.

  8. Enjoy!! Store in fridge up to 2 weeks.
