Ingredients

  • 1 tbsp olive oil
  • 1 medium white or yellow onion thinly sliced
  • 1 tsp fresh ginger finely grated
  • 3 garlic cloves peeled and minced
  • 1 red bell pepper sliced into strips
  • 1/2 cup broccoli florets
  • 1/2 cup sliced carrots
  • 1 14 ounce can full fat coconut milk
  • 2 tbsp green curry paste
  • 1 tbsp matcha powder
  • 1/2 tsp red pepper flakes (or more if you like it spicy!)
  • handful of fresh cilantro or basil for garnishing (optional)
  • limes wedges for serving (optional)

Recipe Notes

Notes: Measurements/variety of the veggies can vary depending on your preference! Sometimes I add more or less depending how filling I want the dish. Also, veggies can be fresh or frozen!
