Taking a bite of one of these Lemon Chia Seed Muffins will take your tastebuds to heaven!! They’re light, fluffy, moist and filled with bright and fresh lemony flavor. When they’re topped with my Homemade Raspberry Jam (recipe coming soon! ?), oh man! SO yummy!!
Not only are they delicious, they’re also incredibly nutritious!! You wouldn’t believe that they’re #VEGAN and #GLUTENFREE by tasting them, but they totally are! Which means, they’re super light on the tummy unlike most baked goods!
They’re also packed with chia seeds instead of poppy seeds, which gives them a boost of antioxidants, vitamins, minerals and protein!
Lemon Chia Seed Muffins (V/GF)
These muffins are light, fluffy, moist and filled with bright and fresh lemony flavor.
Ingredients:
(Wet)
• 1/2 cup apple sauce, unsweetened
• 1/4 cup pure maple syrup
• 1/4 cup almond milk
• 1/4 cup coconut oil, melted
• 1 tsp vanilla extract
• 2 tbsp lemon zest
• 3 tbsp lemon juice
(Dry)
• 1/2 cup + 2 tbsp + 2 tsp gluten free all purpose flour
• 1/2 cup + 2 tbsp + 2 tsp almond flour
• 1/3 cup coconut sugar
• 1 1/2 tbsp chia seeds
• 1 1/2 tsp baking soda
• 1/4 tsp salt
Instructions:
1. Preheat oven to 375 degrees F.
2. In a small bowl, whisk together wet ingredients thoroughly.
3. In a large bowl, add dry ingredients and mix well.
4. Add wet ingredients to dry ingredients and mix until completely combined.
5. Line muffin tins with paper liners.
6. Pour batter evenly between muffin tins.
7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
8. Cool before serving and ENJOY!!!
