I don’t know about you, but chocolate and mint have always always been a favorite flavor combination of mine! The refreshingly cool mint pairs so deliciously well with the rich and smooth chocolate and makes an outstanding flavor profile for these brownies. They’re ultra-moist, super fudgy and filled with mint chocolate chunks that are perfectly melty and gooey. Pure bliss in every bite!!
They’re also a breeze to make! As easy as making brownies from the box. It’s as simple as mixing the ingredients together and popping it in the oven! For such easy work, you’ll be pleased with the luxurious results!

Mint Chocolate Chunk Brownies (V/GF)
What's better than mint and chocolate together?! These Mint Chocolate Chunk Brownies, of course!! They're soft, chewy, fudgy and filled with mint chocolate deliciousness.
Ingredients
- 1/3 cup coconut oil
- 1/2 cup coconut sugar
- 1/4 cup pure maple syrup
- 1/2 cup unsweetened applesauce
- 1 tsp peppermint extract
- 1/3 cup unsweetened cacao powder
- 1/2 cup gluten free all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup mint dark chocolate chunks (I use a mint flavored chocolate bar and break it into chunks – endangered species brand)
Instructions

Preheat oven to 350 degrees F and grease an 8-inch square pan with coconut oil or spray with cooking spray.

In a large bowl, beat together coconut oil and coconut sugar with an electric mixer. Then, stir in maple syrup, applesauce, and peppermint extract. Whisk together until combined.

Gradually add cocoa powder, GF all-purpose flour, salt and baking powder to the wet ingredients while mixing. Mix until fully combined.

Fold in chocolate chips and then spread batter into prepared pan.

Bake in preheated oven for 25 to 30 minutes.

Let cool completely before cutting!
