This vegan ‘Pulled Pork’ Sandwich is anything but ordinary. The ‘meat’ is made of Sweet Potatoes, the Homemade BBQ Sauce is flavored with fresh Cherry Juice and the sandwich is topped with my Homemade Maple Dijon Slaw!
The flavors go together wonderfully and makes a sweet and savory meal.
Pulled Sweet Potato Sandwich with Homemade Cherry BBQ Sauce (V/GF)
This sandwich is reminiscent of the classic pulled pork but actually WAY tastier! The 'meat' is made from sweet potatoes that are smothered in homemade cherry BBQ sauce.
Cherry BBQ Sauce Ingredients:
• 2 8 oz can tomato paste
• 4 tbsp liquid smoke
• 2 tbsp pure maple syrup
• 4 tbsp cherry juice
• 2 tsp garlic powder
• 2 tsp onion powder
• 2 tsp ground mustard
• 2 tsp hot sauce
Maple Dijon Slaw Ingredients:
• 1 cup store bought or homemade slaw
• 1 tbsp pure maple syrup
• 1 tbsp Dijon mustard
Sandwich Ingredients:
• 1 large sweet potato
• 2 buns of you choice
• Optional extra toppings (pickles, onions, etc.)
Instructions:
1. Start by making the BBQ sauce. Add all the the sauce ingredients to a sauce pan over medium-high heat. Let simmer for 20-30 minutes until it thickens to your desired consistency.
2. In the meantime, spiralize the sweet potato or shred it into long strips. Trim the spirals or the strips if they’re very long.
3. Once the BBQ sauce is close to done, throw in the sweet potatoes and mix to combined. Let cool until sweet potatoes are tender, about 5 minutes.
4. While the sweet potatoes are cooking, you can make the slaw. Simply mix the slaw ingredients together until fully combined.
5. Once the sweet potatoes are tender and the slaw is made up, you can assemble the sandwich and enjoy!
