Soft n’ Chewy Chocolate Granola bars (V/GF)

I’ve always been a strong believer that everything is better homemade! Take these Soft n’ Chewy Chocolate Granola bars for example.

They’re everything you expect in a granola bar: soft and chewy, yet sturdy enough to hold together, a satisfying snack and a great pick-me-up! They’re also vegan, gluten-free, scrumptious and incredibly healthy for you, containing super foods like raw cacao, oats, peanut butter, cacao nibs, coconut oil and chia seeds.

Did I mention how easy they are to make?! All it takes is mixing the ingredients together, pressing them into a pan, 30 minutes of chill time and voilà! You’ve got yourself some seriously delicious snacking to do!

Soft n' Chewy Chocolate Granola bars (V/GF)

Ingredients

  • 2 cups gluten free old fashioned oats
  • 3/4 cup creamy natural peanut butter
  • 1/4 cup dried unsweetened cranberries
  • 1/4 cup cacao nibs
  • 1/4 cup coconut oil
  • 1/4 cup pure maple syrup
  • 1/4 cup chia seeds
  • 1/4 cup raw cacao powder (Addictive Wellness’ Brand) *see notes

Instructions

  1. Place all of the ingredients in a bowl and mix well until thoroughly combined.

  2. Line a square baking pan with parchment paper press the mixture into the pan. Take your time really pressing it in there, this will help them hold together properly.

  3. Place in the freezer for at least 30 minutes.

  4. Remove from freezer and let thaw for 5 minutes. Cut into 8 bars or 16 squares and enjoy!! Store in the fridge or freezer in a sealed container.
