Sun-dried Tomato Pesto (V/GF)

Ingredients

  • sun-dried tomatoes (Dry-packed NOT Oil-packed!)
  • 3 garlic cloves peeled and minced
  • 1 cup (tightly packed) fresh basil
  • 1/4 cup pine nuts
  • 1/3 cup olive oil
  • juice from half a lemon
  • pinch red pepper flakes (or more if you like it spicy)
  • 1 tbsp hemp seeds *optional
  • salt and pepper to taste

Instructions

  1. Let sun-dried tomatoes soak in boil water until soft and tender, about 10 minutes.

  2. Transfer sun-dried tomatoes to a food processor or blender with the remaining ingredients and blend until smooth.

  3. Enjoy!
