Thanksgiving Herb Roasted Cauliflower (V/GF)

This Herb Roasted Cauliflower makes the perfect veggie entree for Thanksgiving!  Although, I could enjoy it anytime of year. It’s hearty, healthy, succulently tender and generously seasoned with fresh herbs.

Unlike Thanksgiving turkeys, this whole thing comes together in under an hour and takes just seven simple ingredients.

Other than it’s delicious flavors and texture, what I love most about this dish is that you can present it just like you would with a turkey. Isn’t it festive looking?!

It’s great on its own, but you could also top it off with gravy or cranberry sauce (my fav!).

You can also switch up the herbs but I think the rosemary, thyme and oregano really helps shape the flavor of this Thanksgiving dish.

Herb Roasted Cauliflower (V/GF)

Ingredients

  • 1 large head of cauliflower
  • 1/3 cup olive oil
  • 1 tbsp fresh rosemary finely chopped
  • 1 tbsp fresh thyme finely chopped
  • 1 tbsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper

Instructions

  1. Preheat the oven to 400 degrees F and line a baking sheet with lightly greased parchment paper. Set aside. 

  2. Trim the outer leaves off the cauliflower and cut out the stem just enough so it can sit up straight. Place cauliflower on the prepared pan.

  3. In a bowl, whisk together the remaining ingredients until well combined.

  4. Brush the cauliflower head with the oil mixture until it’s completely coated. I usually massage the cauliflower with my hands too to really get the oil in there! 

  5. Bake until golden and tender, about 45 minutes.

  6. Serve warm as is or top it with cranberry sauce (recipe here). Enjoy!!
