I absolutely love this Balsamic Grilled Peach Flatbread!
If you ask me, grilling or roasting peaches is one of the best and easiest ways to enjoy this summertime fruit. It releases the sweetness and the juice, so you’re getting their full flavor potential without even needing to marinate them!
The juicy, sweetness of the peaches, tang of the balsamic, spicy bitterness of the arugula and the creaminess of the avocado make one hell of a flavor combination for this  flatbread.
My favorite part about this tasty flatbread is that it comes together in minutes and only requires 5 ingredients!
Balsamic Grilled Peach Flatbread (V/GF)

Ingredients
- 2 medium peaches , sliced and pits removed
- 2 flat-breads (I Use Ancient Grain’s brand)
- 1 ripe avocado
- 2 tbsp handfuls arugula
- balsamic vinegar for drizzling
Instructions

Preheat oven to 400 degrees F and lightly oil a cast iron pan.

Wash peaches and then slice them down the middle and carefully pull the halves apart. Remove the pit and then slice the peach halves.

Bake peaches for 10 minutes on each side.

Warm up flat-breads, top with a thick layer of smashed avocado, fresh arugula and then the peaches. Drizzle with balsamic vinegar and serve. Enjoy!
