Best Chocolate Chocolate Cupcakes Ever (V/GF)

If you’re vegan, gluten-free and in need of the best Chocolate Cupcake ever, I gotchu! These cupcakes are without a doubt the best I’ve ever had!

They’re soft, moist, fluffy, bold with chocolate and topped with a light and creamy avocado-based chocolate frosting and mini dark chocolate chips for extra texture and, well, more chocolate!

The frosting is the only chocolate frosting recipe I’ll use. It’s made from 4 simple ingredients: avocado, raw cacao powder, pure maple syrup and pure vanilla extract. The avocado gives this frosting some healthy fats and it’s creamy, smooth texture. I could eat it by the spoonful!

Best Chocolate Chocolate Cupcakes Ever (V/GF)

Ingredients

Cupcakes

  • 1 cup gluten free all-purpose flour
  • 1 cup beet sugar
  • 1/2 cup almond flour
  • 1/3 cup raw cacao powder (Addicted Wellness Brand) *see notes
  • 1 tsp baking soda
  • 3/4 tsp fine sea salt
  • 1 cup unsweetened non dairy milk (I use almond milk)
  • 1/3 cup melted coconut oil (cooled down to room temperature)
  • 1 tbsp apple cider vinegar
  • 1 tbsp pure vanilla extract

Frosting

  • 2 medium ripe avocados
  • 1/2 cup pure maple syrup
  • 1/2 cup raw cacao powder (Addicted Wellness Brand) *see notes
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350 degrees F and line a cupcake tin with paper liners (enough for 12 cupcakes). Set aside.

  2. In a bowl, mix together first 6 ingredients. Set aside.

  3. In a separate large bowl, whisk together the last 4 ingredients until smooth.

  4. Gradually add dry ingredients to wet ingredients and mix together until combined. Don't over mix! 

  5. Scoop batter evenly between the individual cupcake liners. Fill them 2/3 of the way full, leaving enough room for them to rise while baking. 

  6. Bake for 20-24 minutes, or until a toothpick inserted in the middle comes out clean and they're firm, yet bounce back when you touch them. Mine are perfect at 22 minutes. 
  7. Let cool slightly before transferring cupcakes to a cooling rack to cool completely.

  8. In the meantime, make the frosting by simply adding the ingredients together in a food processor and processing until smooth. You may have to stop it a couple times to scrape down the sides of the food processor. Store frosting in refrigerator until ready for use.

  9. Once cupcakes are cool, frost them and top them with optional mini dark chocolate chips. Enjoy!!

  10. Store leftover cupcakes at room temperature for up to 5 days.
