Chai Pear Parfait (V/GF)

I’m sooo excited to share this Chai Pear Parfait recipe with you!  Don’t be fooled by the word ‘parfait’… this is definitely a dessert! However, it is vegan and gluten-free, so technically it’s much healthier than the average dessert. ?

The pears are caramelized in a homemade chai spice mix and are layered in between a homemade granola crumble and whipped cream. It’s dangerously delicious and extremely satisfying!

Chai Pear Parfait (V/GF)

Pears caramelized in an homemade chai spice mix and layered in between a homemade granola crumble and whipped cream makes the perfect autumn dessert!

Ingredients

Granola Crumble

  • 1/2 cup gluten-free all purpose flour
  • 2 1/2 tbsp vegan butter (I use Earth Balance)
  • 2 tbsp coconut sugar
  • a pinch of salt
  • 1/4 cup GF granola and/or crushed nuts of choice

Caramelized Chai Pears

  • 2 cups pears (Anjou or Bartlett) cored, skin removed and chopped
  • 3 tbsp vegan butter (I use Earth Balance)
  • 1/4 cup coconut sugar
  • 1 tbsp vanilla extract
  • 1 1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cloves

For the whipped cream, I used the SO Delicous brand (it really is delicious! Vegan too!)

Instructions

  1. Preheat oven to 325 degrees F.
  2. Combine gluten-free flour, vegan butter, coconut sugar and a pinch of salt in a medium bowl. 
  3. Using your fingers, work the mixture until it comes together in small clumps. Scatter crumble on a large parchment-lined baking sheet. 
  4. Bake until golden brown and slightly firm, about 30 minutes. 
  5. Let cool and then break into smaller pieces. Set aside.
  6. To make the pears, add the vegan butter to a medium sized skillet over medium-high heat. Once butter is melted, add the chopped pears and cover with the remaining ingredients. Stir to evenly coat pears. Let cook while occasionally stirring until sauce has thickened and pears are tender, about 10 minutes. Set aside to cool slightly.
  7. Assemble the parfaits starting with a layer of the granola crumble, then the pears, then the whipped cream. Repeat until your glass is full. The top layer should be the whipped cream. 
  8. Serve and enjoy!!!
