Homemade Granola (V/GF)

This Homemade Granola is a new obsession of mine! It’s definitely the most delicious granola I’ve tasted, not to toot my own horn. Actually, I deserve to toot my horn after making this deliciousness! Toot toot!

It comes together in about an hour and a half, but it’s sooo worth the wait! It’s filled with Hazelnuts, Pecans, Oats, Apricots, Dried Strawberries, Cranberries, Dried Blueberries and Coconut! The beauty of this recipe is that you can use any dried fruit you’d like: raisins, dates, dried cherries, you name it!

You can also add some extra goodies like chia seeds, pepitas, cacao nibs, whatever your heart desires! You could switch up the nuts too, but the pecans and hazelnuts are actually my favorite part of all this yumminess! 

I’ve been eating it as an on-the-go snack, in a bowl with almond milk, on top of smoothie bowls and, if I’m being honest, as dinner for the past few nights! I can’t get enough of it!

Homemade Granola (V/GF)

The beauty of this recipe is that you can use any dried fruit you'd like: raisins, dates, dried cherries, you name it! You can also add some extra goodies like chia seeds, pepitas, cacao nibs, whatever your heart desires! You could switch up the nuts too, but the pecans and hazelnuts are actually my favorite part of all this deliciousness!

Ingredients

  • 1/2 cup coconut oil
  • 1/3 cup maple syrup
  • 1/3 cup coconut sugar
  • 1 tbsp vanilla extract
  • 1/2 tsp salt
  • 3 cups gluten-free old-fashioned rolled oats
  • 1 cup raw hazelnuts , crushed
  • 1 cup raw pecans , chopped
  • 1/2 cup dried apricots
  • 1/2 cup dried strawberries
  • 1/2 cup cranberries
  • 1/2 cup dried blueberries
  • 1/2 cup shredded coconut

Instructions

  1. Preheat oven to 325 degrees F and line a baking sheet with parchment paper. Set aside.

  2. In a large bowl, mix together the maple syrup, coconut sugar, vanilla, salt and coconut oil.

  3. Add the oats, hazelnuts and pecans to the wet ingredients and mix to combined.

  4.  Making an even layer, spread the mixture onto the prepared pan. 

  5. With your hands, press mixture until it’s very compact.

  6. Bake for 30-35 minutes rotating pan once halfway through baking.

  7. Once baked, remove it from the oven and let it cool completely, about an hour.

  8. Break cooled granola into pieces of your desired size.

  9. Mix in the chopped dried fruit and shredded coconut. 

  10. Enjoy!!! 

Recipe Notes

Notes: You may switch up the dried fruit to your preference. Although, this combination is absolutely delicious!
