Chocolate Chia Pudding (V/GF)

Happy Friday everyone!!

There’s no better way to start off the weekend than with a tasty treat, especially when it’s actually healthy for you!

This five-ingredient Chocolate Chia Pudding has been a longtime go-to snack for me when I’m craving something sweet, but don’t want to indulge too much. It’s sweet, chocolaty, extremely pudding-like and so satisfying! It keeps me full for hours!

It’s also packed full of antioxidants thanks to the raw cacao, chia seeds and berries! In fact, cacao and blueberries are listed as 2 of the top 3 antioxidant-rich foods!

This pudding is also protein-packed and full of omega-3s, thanks to the chia seeds.

Chocolate Chia Pudding (V/GF)

Ingredients

  • 3/4 cup unsweetened non dairy milk (I use almond milk)
  • 3 tbsp chia seeds
  • 1-2 tbsp pure maple syrup (only 1 tbsp is necessary but it IS more delicious with 2)
  • 1 tbsp raw cacao powder (Addictive Wellness Brand) *see notes
  • 1 tsp pure vanilla extract
  • Optional blueberries and/or strawberries (to top)
  • Optional cacao nibs (to top)

Instructions

  1. Simply add the ingredients together in a glass or a mason jar and seal the lid tight. Shake vigorously. Let sit for 10 minutes, giving it a shake every minute or so. Transfer to the refrigerator to let set for 3-4 hours.
  2. Top pudding with optional berries and cacao nibs. Enjoy!
