This easy Creamy Tomato Basil Soup is exactly what you need during this cold weather! Although, I could happily eat this soup all year-round! It’s creamy, luxurious and has a perfect balance of sweet and savory. The secret to the creaminess in this vegan soup is coconut cream! It doesn’t stop there, though. This soup is full of special ingredients!!!
Remember yesterday’s Sun-dried Tomato Pesto?!
I put a generous amount of that delicious pesto IN the soup! You heard me right, sun-dried tomato pesto stirred in this already creamy tomato soup… it’s as delicious as it sounds, if not better. This soup is also made with fresh, juicy tomatoes. I can’t tell you what a difference it makes using fresh tomatoes instead of canned! Not only is it better health-wise (no additives or BPA concerns), it also makes the flavor so pure and distinctly fresh!

Creamy Tomato Soup (V/GF)
This Creamy Tomato Soup is extra creamy from the coconut cream and extra delicious from it's secret ingredient!
Ingredients
- 2 tbsp olive oil
- 2 large garlic cloves peeled and minced
- 2 large carrots peeled and diced
- 1 medium yellow onion chopped
- 1 tsp dried thyme
- 4 cups low sodium vegetable broth
- 1 cup full fat coconut cream
- 8 roma tomatoes chopped
- 1/2 cup sun dried tomato pesto
- 1/2 cup fresh basil finely chopped
- Juice from half a lemon
- 1/4 tsp cayenne pepper *optional
Instructions

Add oil to a large pot over medium heat. Stir in garlic, carrots, onions and thyme. Cook over medium-low heat until the onion is tender.

dd the vegetable broth and coconut cream, cover and simmer for 20 minutes.

Stir in the tomatoes and simmer for another 10 minutes.

Remove from heat and use a hand held blender or transfer to a blender and blend the soup until smooth.

Add pesto and blend some more until combined.

Stir in lemon juice, basil and cayenne pepper. Add salt and pepper to taste.
