There’s nothing I love more than spending a beautiful day outside grilling. I usually go the savory route when it comes to grilling but lately I’ve been having the desire to make an epic dessert on the grill. I figured pineapple would be just the thing I need to do that!
Grilled pineapple is outstanding on it’s own, but when you soak it in rum and top it off with some ice cream, you’re in for a dangerously delicious treat.
You only have to soak the pineapple slices in rum for half an hour to get the perfect balance of flavors. When you grill the rum soaked pineapple, it becomes this warm, super juicy, charred deliciousness.
Adding a scoop of ice cream really ties this dessert together and a touch of Homemade Caramel is always a good touch, obviously.
It’s so much fun to make, eat and share with others! Definitely a show stopper in both looks and taste.
Rum-Soaked Grilled Pineapple Sundaes (V/GF)
Grilled pineapple is outstanding on it's own, but when you soak it in rum and top it off with some vanilla ice cream, you're in for a dangerously delicious treat.
Ingredients
- 4 pineapple slices
- 2 50ml bottle rum
- 2 scoops vanilla ice cream (I use Larry and Luna’s Brand - V/GF and delicious!)
- Homemade Caramel (http://bunnysbite.com/peachy-caramel-cupcakes-coconut-fros…/)
Instructions

Soak pineapple rings in rum for half an hour. Then drain and discard rum, or save for later. (;

Grill pineapple until charred, 1 minute per side.

Top each pineapple slice with ice cream and drizzle with caramel. Serve immediately and enjoy!
