Try this Sweet and Savory Grain Bowl!

More specifically, it’s made with Brown Rice, juicy Mangos, Golden Raisins, Pistachios, Red Onion, Green Onions, Tomatoes, Pickled Jalapeños and my Homemade Dressing consisting of Tamari, Peanut Oil, Peanut Butter and fresh Garlic. SO YUMMY!

If you make the rice ahead of time, this meal only takes a couple minutes to throw together! I like to make this when I’m prepping my meals for the week. Makes life so much easier!

You can switch up the grain and the veggies, although, I highly recommend this mix! I like to use brown rice because it has more overall nutrition than white rice.

The veggies I use are so flavorful and complimentary to each other and they add a lot of great texture!

Sweet and Savory Grain Bowl (V/GF)

Ingredients

Rice and Veggies

  • 1 cup brown rice
  • 2 cups water
  • 1 tbsp oil (olive, vegetable, coconut, etc) * optional
  • 1/2 tsp salt
  • red onion , diced
  • tomatoes , chopped
  • green onions , chopped
  • golden raisens
  • pickled jalapenos (or any other pickled peppers)
  • pistachios
  • mango , chopped

Sauce

  • 3 tbsp tamari sauce
  • 1 tbsp peanut or toasted sesame oil
  • 1 tbsp peanut butter
  • 1 large clove of garlic , peeled and minced

Instructions

  1. Start by cooking the rice. Add the rice, water, optional oil and salt to a medium pot. Stir to combined. Heat over medium-high heat. Bring to a boil, then cover with a lid and reduce heat. Allow to simmer until rice is soft, about 40 minutes. Check on it every once in a while and stir. Add more water if necessary.

  2. While rice is cooking, make sauce by whisking all of the sauce ingredients together in a bowl. 

  3. Once rice is cooked, add it to a bowl with the veggies and stir in the sauce. Serve and enjoy! This yields one large serving or two small servings.
