Watermelon Raspberry Smoothie Bowl (V/GF)

Happy hump day ya’ll! By midweek, I usually always need a little pick-me-up. This Watermelon Raspberry Smoothie Bowl will do just that!

Not only is it full of energy-boosting nutrients from the fruit and nuts, but it’s bright flavors never fail to perk me up!

This is also one of my favorite ways to use up some extra watermelon, along with my Watermelon Cantaloupe Salsa (I always buy way too much!).

The watermelon tastes insanely delicious with the raspberries. They compliment each other SO well!! There’s also a couple frozen bananas in there to thicken the texture and add even more nutrients!

I like to top this smoothie bowl with complimentary flavors like Kiwis, Coconut, Almonds and Granola for a nice crunch!

Ingredients

  • 1 cup watermelon chopped
  • 1 cup frozen raspberries
  • 2 frozen bananas
  • 1/2 cup almond milk, unsweetened *Optional*
  • Optional Toppings coconut shreds, almonds, granola, fruit, etc. Purely Elizabeth is a great vegan and gluten free brand of granola, but there's a lot more out there too!

Instructions

  1. Combine the watermelon, raspberries and bananas to a food processor or a blender and process/blend until smooth. Add almond milk if you water a thinner, runnier consistency.

  2. Pour into a bowl, top with your favorite toppings and enjoy! You can also enjoy this as a regular smoothie, but I prefer it as a bowl only because I can add extra goodies to it! (:
