Chocolate, Vanilla and Raspberry Chia Pudding

This Neapolitan inspired pudding is layered with Chocolate Chia Pudding, Vanilla Chia Pudding and Raspberry Chia Pudding.

This is by far the simplest, most delicious way to reap the health benefits of chia seeds! Although it tastes like dessert, it’s actually healthy enough to enjoy as breakfast! I like to make a serving in the morning before I workout and then when I get home a few hours later, voilà! Homemade pudding that’s packed with protein, antioxidants and healthy fats ?

The pudding is light on the tummy and satisfies your sweet tooth with just one bite! My favorite part about this tasty treat is that it only takes FIVE INGREDIENTS to make each of these puddings!

Chocolate, Vanilla and Raspberry Chia Pudding

This Chia Pudding puts regular pudding to shame! The texture is so light and creamy. The flavor profile of each pudding is delicious on their own and absolutely phenomenal layered together!

Chocolate Chia Pudding Ingredients:

• 3/4 cup almond, unsweetened
• 3 tbsp chia seeds
• 1-2 tbsp maple syrup (only 1 tbsp is necessary but it IS more delicious with 2 ?)
• 1 tbsp cacao powder, unsweetened
• 1 tsp pure vanilla extract

Raspberry Chia Pudding Ingredients:

• 1 cup almond milk, unsweetened
• 1 1/4 cups fresh raspberries
• 3 tbsp chia seeds
• 1-2 tbsp pure maple syrup (only 1 tbsp is necessary but it IS more delicious with 2 ?)
• 1 tsp vanilla extract

Vanilla Chia Pudding Ingredients:

• 3/4 cup almond, unsweetened
• 3 tbsp chia seeds
• 1-2 tbsp maple syrup (only 1 tbsp is necessary but it IS more delicious with 2 ?)
• 2 tsp pure vanilla extract

Optional Toppings: coconut shreds, fruit, nuts, chocolate, etc.

Instructions:

1. For the chocolate pudding, simply add the ingredients together in a glass or a mason jar. Whisk vigorously together. Let sit for 10 minutes and give it a whisk every minute or so. Transfer to the refrigerator to let set for 3-4 hours.
2. Follow the same instructions for the vanilla pudding.
3. For the raspberry pudding, add the raspberries and the almond milk to a food processor or blender and blender until smooth. Pour raspberry milk to a glass or jar and then add the remaining ingredients. Like the other puddings, you’ll want to follow the same whisking and chilling steps.
