Carrot Ginger Dressing (V/GF)

I am sooo in love with the flavors in this Carrot Ginger Dressing!! It’s zesty, sweet, thick in texture and has a bright orange color that is absolutely beautiful, especially when pairing with already colorful veggies! I love eating this dressing with a simple salad of cabbage, carrots, cucumber and peanuts. The flavorful dressing transforms the simple veggies into something quite spectacular!!

You can find this dressing at most Japanese restaurants, but why make the trip when you can easily make it yourself at home?! It’s as simple as blending the ingredients together. Seriously, it’s that easy! In just a few minutes you can have a delicious Japanese restaurant-style dressing in the comfort of your own home!

Carrot Ginger Dressing (V/GF)

Ingredients

  • 1 cup carrots peeled and grated
  • 1/2 cup peanut oil
  • 3 tbsp rice wine vinegar
  • 2 tbsp pure maple syrup
  • 1 tbsp fresh ginger finely grated
  • 2 tsp miso paste
  • salt and pepper to taste

Instructions

  1. Blend all of the ingredients together and enjoy!!

  2. Store leftovers in an airtight container in the refrigerator for up to 5 days.
