Kale Pesto (V/GF)

This pesto recipe is the easiest way to sneak a bunch of kale into your meal without even noticing it! It’s packed with flavor, antioxidants and even some plant-based protein!

This pesto is a fabulous replacement for marinara whether it’s on your pizza or stirred in a bowl of zoodles!! It’s also a delicious condiment for veggie burgers, wraps, and sandwiches! Actually, you know what? It’s delicious on EVERYTHING! The best part is, it takes under 5 minutes to prepare this nutrient dense pesto!!

Kale Pesto (V/GF)

This kale pesto is a game changer! It's everything you love about classic pesto, but packed with so much more nutrients and antioxidants!

Ingredients

  • 1/2 cup chopped kale (stems removed) moderately packed
  • 1/2 cup fresh basil tightly packed
  • 1/3 cup pine nuts
  • 1/4 cup olive oil
  • 2 large garlic cloves minced
  • juice from one lemon
  • 3/4 tsp salt

Instructions

  1. Place all of the ingredients into a food processor and process until it’s well blended. You may have to stop the processor once or twice to scrap down the sides.

  2. Enjoy!!
