Spinach Sweet Potato Burger (V/GF)

If you haven’t put fries on top of your burger, YOU HAVEN’T LIVED!

Especially when it’s sweet potato fries on top of a Spinach Sweet Potato Burger! Perfect flavor combo!

This burger is inspired by a salad that I have (almost) on the daily, which consists of: a bunch of spinach, a baked sweet potato, pistachios and roasted chickpeas. After eating and loving this salad for so long, I decided to make this deliciousness in burger form and, man, am I glad I did!

This burger is so incredibly flavorful, juicy, tender, nutritious, satisfying – basically, all the things you want in a burger!

It’s topped with sautéed spinach, onions, mushrooms and a bunch of Sweet Potato Fries! I highly recommend these toppings for this burger – it’s so yummy!!

Spinach Sweet Potato Burger (V/GF)

Ingredients

Patties

  • 1 15 oz can chickpeas , drained and rinsed
  • 1 tightly packed cup fresh baby spinach
  • 1/2 cup cooked and mashed sweet potatoes
  • 1/2 cup unsalted pistachios
  • 1/4 cup gluten free old fashioned oats
  • 1 tbsp red wine vinegar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 3 garlic cloves , peeled and minced
  • juice from 1 lime

Toppings

  • sauteed spinach
  • sauteed onions
  • sauteed mushrooms
  • sweet potatoes

Instructions

  1. In a food processor, processor together the chickpeas, sweet potato, pistachios and oats. 
  2. Add remaining ingredients and process until smooth.
  3. Let mixture chill in the fridge for 20-30 minutes. This makes it a lot easier to form into patties!
  4.  Once mixture has cooled, preheat oven to 400 degrees F and line baking sheet with parchment paper.
  5. Form mixture into 4 large patties and bake for 40 minutes, until firm.
  6. Let patties cool slightly before assembling burger and ENJOY!!!
